Here are some beloved recipes

for good 'ol fashioned southern favorites


Southern Style Macaroni and Cheese


Ingredients:


5 cups cooked macaroni

(approx 4 cups uncooked)

5 tbsp butter

2 eggs

1/2 tsp salt

1/2 tsp pepper

3 cups milk

2 cups shredded mozarella cheese

4 cups shredded cheddar cheese


Cook the macaroni until done as usual. Do not overcook it.

Drain macaroni in strainer.


Place macaroni, butter,

salt,pepper, milk, mozarella cheese,

and 3 cups of cheddar cheese in casserole dish.

Mix eggs in a bowl first

and then stir into mixture.


Cover everything with aluminum foil

and cook for 45 minutes at 350 degrees.


Uncover and add extra cup of cheddar cheese across the top.

Bake uncovered for another 15 minutes.



Fresh Lettuce and Bacon Grease


Go out to the garden and pick the first new shoots of lettuce

wash thoroughly and put in a bowl

add 2 chopped green onions

add 1 chopped tomato

heat bacon grease or fry bacon (may crumble bacon on salad)

pour hot grease on salad

toss add a little salt and pepper.

This is so good!




Chocolate Coca Cola Cake


2 cups flour (plain)

2 cups sugar

2 sticks margarine

3 Tablespoons cocoa

1 cup cola

1/2 cup buttermilk

2 beaten eggs

1 teaspoon baking soda

1 teaspoon vanilla

1 1/2 cups miniature marshmallows

Combine flour and sugar in bowl.

Heat margarine, cocoa and cola to boiling in sauce pan.

Pour over flour mixture and add remaining ingredients.

Mix well.

Pour into greased and floured 9 x 13 pan

bake at 350� for approximately 40 minutes.



ICING:


1 stick margarine

3 Tablespoons cocoa

6 Tablespoons coca cola

1 box powdered sugar

1 teaspoon vanilla

Bring margarine, cocoa and cola to boil; pour over sugar.

Mix well;

add vanilla.

Pour over cake.




'Nanar Puddin'


2 large bananas

1 tub cool whip

1 large box vanilla pudding mix

2cups milk

1 box vanilla wafers or graham crackers


In a large bowl mix pudding with milk stir until thickened

add sliced bananas stir well.

In a large pretty bowl

put vanilla wafers or graham cracker squares

on bottom and sides of bowl .

Pour on the pudding with bananas

Top with cool whip

crush extra wafers or graham crackers on top

Chill atleast 15 - 30 mins.




Shoo-Fly Pie


1 1/2 cups Shifted flour

1 cup brown sugar

1/8 t4easpoon salt

1/4 cup shortening, not butter

1/2 teaspoon baking soda

1/2 cup hot water

1/2 cup molasses

2 pie pastries

Make crumbs by combining flour, sugar, salt and shortening.

Set aside.

In a second bowl

dissolve soda with hot water and combine with molasses.

Add 3/4 of the crumbs mixture to it and pour into pastry pans.

Add remaining crumbs to top.

Bake in very hot oven(450) for 10 minutes.

Reduce temperature to 350

and bake for 20 minutes or until middle is firm.




Cat Head Biscuits (As Big As A Cat's Head)


Ingredients:


2 cups of flour

1/4 teaspoon of baking soda

2 teaspoons of baking powder

1 teaspoon of salt

5 tablespoons of lard or shortening

About 1 cup of buttermilk


Sift the dry ingredients together and cut in the lard or shortening.

Add enough buttermilk to make a soft dough.

Pinch off about a lemon sized ball of dough

for each biscuit and pat out with your hands.

Bake for 12 � 15 minutes at 450 degrees

or until the tops are golden brown.

Remove the biscuits form the oven

and rub butter on the tops of the hot biscuits to coat.




Southern Chocolate Gravy

(This makes a great breakfast that kids love)


Ingredients:


2 heaping tablespoons of cocoa

1 cup of sugar

3 tablespoons of flour

4 cups of milk

1 teaspoon of vanilla

1 tablespoon of butter


Mix the cocoa, flour, and the sugar in a pot

with a fork or whisk until well blended.

Add all of the other ingredients and bring to a boil,

stirring .constantly, over medium heat.

Continue cooking until the

gravy is the desired thickness.

Serve hot over cat head biscuits with lots of butter.




Country Ham with Red-Eye Gravy


Take a slice of ham about 1/2 inch thick and make slashes

all around the edges in the fat to keep

ham from buckling up when it cooks.

Put the ham in a heavy skillet and cook

over low heat, turning several times, until brown.

Take ham from the pan

and put it on a platter in a warm place.

Add about 1/2 cup of hot water

to the drippings in the skillet and cook

until the gravy turns red.

Have grits and hot biscuits waiting

to serve with the ham and gravy.




Country Fried Chicken


one 2 1/2 to 3 pound fryer chicken, cut up

buttermilk, enough to cover the yard bird

vegetable shortening

1 cup all-purpose flour

2 teaspoons garlic powder

1 teaspoon onion powder

3 teaspoons seasoned salt

1/8 teaspoon poultry seasoning

1 1/4 teaspoon black pepper


Wash chicken pieces and place in a deep bowl.

Cover with buttermilk and refrigerate at least 2 hours.

Melt shortening in a cast iron skillet to a depth of about 1 inch.

Heat to about 370 degrees F.

In a plastic bag, mix together all of the dry ingredients.

Remove chicken from bowl.

Place chicken in bag, one piece at a time.

Shake well until thoroughly coated.

Dip each piece in the buttermilk and coat with flour once again.

Shake off excess; place on waxed paper for 15 minutes or until dry.

Place chicken, skin side down, in hot shortening.

Do not crowd skillet.

Brown slowly until golden on all sides.

Cover and simmer, turning occasionally, for 35 to 40 minutes or until juices run clear and chicken is tender.

Uncover and cook 5 minutes longer.

4 to 8 servings

Sweet Tea


Ingredients


2 Luzianne Family Size tea bags

3/4 cup of sugar


Directions


Fill a 1 quart saucepan almost full with water.

Place lid on saucepan and bring water to a boil. Remove from burner, put 2 large tea bags in the water, cover and let sit for at least 20 minutes.

Pour tea into a 4 quart pitcher.

Dissolve 3/4 of a cup of sugar in the tea, stirring until dissolved.

Fill the rest of the pitcher with cold water.


Notes:

If you use a 1 1/2 quart sauce pan, use 3 family-size tea bags.

And if you don't have Luzianne Family Size tea bags, Lipton tea is a fine substitute.

Coca Cola Salad


1 pk. cherry jello

1 pk. strawberry jello

3 1/2 cups coca cola

1 large can black bing cherries

1 small can crushed pineapple

1 - 8 oz. pk. cream cheese

1 cup chopped pecans


Heat coca cola to boiling point and mix with jello.

Stir until dissolved.

Let mixture chill until it begins to thicken, then add drained cherries, pineapple, nuts and cream cheese.

Mix well and place in refrigerator to congeal.


Chocolate Pound Cake


1 cup oleo or butter

1/2 cup crisco

5 eggs

3 cups sugar

1/2 cup cocoa

3 1/2 cups flour

1 tbsp. vanilla

1/2 cup buttermilk

1/2 tsp. baking soda


Cream butter and crisco well, add sugar and cream until light and fluffy.

Add eggs one at a time, beating well.

Sift dry ingredients, add alternately buttermilk, and add vanilla.

Pour into a greased and floured stem pan.

Bake one hour and 20 minutes on 300 degrees.

You may use the icing on this cake with pecans in it.


Chocolate Pie


1 1/2 cup sugar

2 level tablespoons cocoa

2 level tablespoons plain flour, mix this together.

Add 1/2 cup cold water, stir until smooth

Add 3 egg yolks, beat well.

Add 1 1/4 cups carnation milk and 1 teaspoon vanilla and 1/2 stick oleo.

Stir until all this is mixed well.

Cook over medium heat, stirring constantly until thick.

Turn heat to low and let cook for 7 minutes.

Pour into baked pie crust and top with meringue.


Meringue:


3 egg whites

1 teaspoon vanilla

1 teaspoon cold water and a pinch of salt

Beat on high speed of electric mixer until peaks form.

Add 1/2 cup sugar and continue beating until sugar is dissolved.

Do not stop mixer at any time while beating or the egg whites will fall.

Cover pie with meringue and bake at 350 degrees until brown.


Bread Pudding


8 1-day-old biscuits

6 slices bread

2 cups boiling water - pour water over biscuits and bread.

Mash with vegetable masher.

Add 1 cup butter, stir well.

8 eggs

2 cups sugar

1 tsp. vanilla

4 cups milk


Beat eggs slightly.

Add sugar and vanilla.

Add milk and mix well.

Pour this over softened bread and mix well.

Grease a large casserole dish with butter and pour mixture into it.

Bake in the oven on 400 degrees for 40-50 minutes.

Stick a toothpick in center, if it comes out clean, the pudding is done.


Southern Potato Salad 4 potatoes 2 eggs hard-boiled and chopped 1/2 stalk celery, chopped 1/4 cup sweet relish 1 tablespoons prepared mustard 1/2 cup mayonnaise salt and pepper to taste Optional: *1/4 cup finely chopped celery *1/4 finely chopped onion *Fresh snipped parsley for garnish *Paprika for sprinkling Peel potatoes and chop into small cubes. Place potatoes in pot of boiling water and cook until tender but still firm, about 15 minutes; drain. In a large bowl, combine the potatoes, eggs, sweet relish, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm. (Alternate: Mash potatoes with a potato masher, add other ingredients and mix well. Serve warm.) *Add onions and/or celery with other ingredients. *Sprinkle top of potato salad with Paprika, garnish with parsley or sliced hard-boiled eggs.


Fried Green Tomatoes Yield: 4 servings 1 cups plain white corn meal 1 cup plain white flour 1 1/2 tablespoon salt Pinch of black pepper 1/2 cup cooking oil Combine flour and corn meal. Wash the tomatoes and pat dry. Cut tomatoes in 1/4-inch slices. Sprinkle with salt and pepper. Dip each slice in corn meal-flour mixture and lay aside on waxed paper. Heat oil. Fry tomato slices until golden brown. Drain on paper towels. Serve hot. This recipe is very adaptable. Some prefer using all flour or all corn meal. Some people prefer *green* tomatoes, others prefer slightly pink tomatoes. Try serving with ranch dressing or sprinkling with garlic powder before cooking.
