Orange Glazed Cornish Hens



1 Cup Finely Chopped Onion

1 Cup Finely Chopped Celery

1/2 cup finely chopped mushrooms

1/2 Cup Butter

3 Cups Cooked Rice

4 Tsp Sugar

1 Tsp Salt

1/2 Tsp Dried Thyme

1/2 Cup Grated Orange Peel

4 (20 Oz) Cornish Game Hens



1/4 Cup Honey

1 Cup Orange Juice

1/4 Cup Oil

1 Tbsp Grated Orange Peel


 In a skillet, sauté the onion, celery and mushrooms in butter. Add rice, sugar, salt, thyme and orange peel; mix well. Loosely stuff hens. Place breast side up, on a rack in a shallow baking pan. Make the glaze by combining the honey, orange juice, oil and grated orange peel in a small bowl. Spoon some over hens.

Bake, uncovered for 40 minutes in a 350 degree F oven. Cover and bake an additional 30-35 minutes or until juices run clear, brushing often with glaze.
