Chicken Marsala

Ingredients:

Chicken breast halves, skinned

Dry Marsala wine

Clove garlic, minced

Heavy or whipping cream

Angel hair pasta or pasta of choice

Directions:

Heat butter and ol in a large skillet over medium-high heat until melted and bubbly. Add the chicken; reduce heat to medium. Cook uncovered until chicken is tender and golden brown. Remove and set aside


Slice the fresh mushrooms thinly. Cook the sliced mushrooms in the same pan until tender and golden brown. If the pan becomes too dry, add a bit of butter to moisten it. Add the garlic to the pan and cool for about 3 min. Add the Marsala wine, Cook and stir scrapping up any brown bits in skillet. Stir in cream. Cook and stir about 3 min or until sauce is be thick and creamy. Stir in salt and pepper to taste. Add chicken back to pan, coating with sauce.

Cook the Pasta according to package directions. Drain, and serve up on a platter. Place the chicken on the pasta. And cover with the sauce, sprinkle with the fresh parsley.
