Quickie Lime Pie

Ingredients:

Crust:

Vanilla wafers

Butter, melted

Grated lime peel

Filling:

Can sweetened condensed milk

Lime juice

Large eggs

Directions:

Preheat oven to 350F. In a food processor, finely grind the vanilla wafers. Add melted butter and tablespoons lime peel and process until moist crumbs form. Transfer into a 9 pieplate and press crumbs, onto bottom and up sides. Crust will be thin. Bake for 10 minutes or until edges are golden brown. Remove from oven and set aside to cool.

Whisk condensed milk, lime juice and 1 tablespoon lime zest in a medium bowl to blend. Whisk in eggs. Pour filling into crust. Bake for 20 minutes or until filling is set. Cool. Refrigerate until chilled, about 1 hour.
