Honey Crunch Pecan Pie

9 Single Pastry Crust

Eggs, Lightly Beaten

Topping:

Brown Sugar, Firmly Packed

Pecan Halves

Directions:

Heat oven to 350F. Prepare the 9 pie plate with the pie shell. Fold under pastry edge and flute. Set aside unbaked until ready to fill.

Filling: Combine eggs, brown sugar, sugar, salt, corn syrup, butter, bourbon, vanilla and nuts. Mix well and spoon into the unbaked pie shell. Bake for 20 minutes. Remove from oven.

Topping: Combine sugar, butter, and honey in medium saucepan. Cook about 3 minutes or until sugar dissolves. Add nuts. Stir until coated. Spoon evenly over filling in pie plate. Cover edge of pastry crust with foil. Bake 10-20 minutes or until topping is bubbly and golden brown. Cool to room temperature before serving.
