Eggnog Custard Pie
1-2/3 cup graham cracker crumbs
1/2 cup butter
1/4 cup sugar
1/2 tsp cinnamon
1/8 tsp nutmeg
1-1/2 cups eggnog
4 large eggs
1 cup granulated sugar
1 tsp cinnamon
1/4 tsp nutmeg
Preheat oven to 350ºF. Grease a 9” pie dish.
Pie Crust: Mix together graham cracker crumbs, butter, sugar, cinnamon, and nutmeg, press pie dish. Bake for 8 minutes. Remove from oven and allow to cool before adding filling.
Filling: In a large bowl, whisk together eggs and eggnog. Add sugar, cinnamon and nutmeg and whisk till well-blended.
Raise oven temperature to 425ºF. Place pie pan on a cookie sheet covered in foil, and pour filling into pie crust. Sprinkle with cinnamon. Bake for 45 minutes, then lower heat to 350ºF and bake 45 minutes more, or until center of custard is NEARLY solid (Jell-O like). Allow to cool before serving
