Eggnog Custard Pie

 

Ingredients:

Pie Crust:

1-2/3 cup graham cracker crumbs

1/2 cup butter

1/4 cup sugar

1/2 tsp cinnamon

1/8 tsp nutmeg

 

Filling:

1-1/2 cups eggnog

4 large eggs

1 cup granulated sugar

1 tsp cinnamon

1/4 tsp nutmeg

Directions:

Preheat oven to 350F. Grease a 9 pie dish.

 

Pie Crust: Mix together graham cracker crumbs, butter, sugar, cinnamon, and nutmeg, press pie dish. Bake for 8 minutes. Remove from oven and allow to cool before adding filling.

Filling: In a large bowl, whisk together eggs and eggnog. Add sugar, cinnamon and nutmeg and whisk till well-blended.

Raise oven temperature to 425F. Place pie pan on a cookie sheet covered in foil, and pour filling into pie crust. Sprinkle with cinnamon. Bake for 45 minutes, then lower heat to 350F and bake 45 minutes more, or until center of custard is NEARLY solid (Jell-O like). Allow to cool before serving
