Daisy Mae Apple Pie

Unbaked 9 Double Pastry Crust

Filling:

Large Granny Smith Or Tart Baking Apples

Cup

Brown Sugar, Firmly Packed

Quick Cooking Tapioca

Cinnamon

Nutmeg

Butter, Melted

Glaze:

Egg

Directions:

Preheat oven to 400F.

Filling: Peel, core, and thinly slice the apples, placing in a large bowl. Add the brown sugar, tapioca, cinnamon, nutmeg, butter, lemon juice and vanilla, toss to coat apple slices. Spoon into unbaked pie shell. Moisten pastry edge with water. Cover with top crust. Fold top edge under bottom crust and flute. Cut slits into top or prick with a fork to vent.

Glaze: Combine egg, and milk in small bowl. Brush top and edges of pie and sprinkle with sugar. Bake for 10 minutes on 400F and then reduce oven temperature to 350F and bake for an additional 40 minutes or until crust is golden brown. Cool before serving.
