No Crust Cheesecake

Ingredients:

Eggs

Lb

Ricotta cheese

1

Cup

Sugar

1

Tsp

Vanilla

 

 

Juice and rind of one lemon

 

 

Confectioners sugar for dusting

Directions:

Preheat oven to 400F.

In a large bowl with an electric mixer, combine the eggs, ricotta cheese, sugar, vanilla, and lemon juice and rind. Pour ingredients into a 9 springform pan. And bake for 15 minutes. Reduce heat to 328F for an additional 45 minute or until set. Remove to a wire rack to cool in pan. Dust with confectioners sugar.
