Huguenot Apple Torte

 

Ingredients:

Flour

Tsp

Baking powder

Tsp

Salt

Sugar

Vanilla

Finely chopped tart apples

1

Cup + 2 tbl

Pecans, finely chopped

Heavy cream

Directions:

Preheat oven to 400. Generously grease a 9x11 baking dish.

Combine flour, baking powder and salt and set aside.

With an electric mixer on medium high, beat the eggs, sugar and vanilla for 3 minutes or until thickened. Beat in flour mixture. Gently fold in the apples and 1 cup of the chopped pecans. Pour batter into the prepared baking dish and smooth the top with a rubber spatula. Bake in middle of oven for 30-35 minutes or until a tester inserted in center comes out clean. Remove and let cool on wire rack.

Meanwhile, in a chilled bowl, beat the cream with an electric mixer until stiff. Serve the torte with whipped cream and a sprinkle of the remaining chopped pecans.
