Down Under Lime Pie
3/4 Cup Rolled Oats
3/4 Cup shredded Coconut
3/4 Cup All-Purpose Flour
1/2 Cup Sugar
1/2 Cup Butter
2 Tbsp Lite Corn Syrup
1 tsp Baking Soda
14 oz can Sweetened Condensed Milk
1/2 Cup Lime Juice
4 Egg Yolks, beaten
2 tsp Grated Lemon Zest
Preheat Oven to: 350°F. Grease a 9x9" Cake Pan
Mix rolled oats, coconut, flour, and sugar together in a medium bowl. Set aside.
In a second bowl, melt the butter in a microwave. Add corn syrup and baking soda to the butter. Stir until the mixture becomes frothy. Pour butter mixture into the oat mixture and stir until completely blended. Press the oat mixture into the bottom and sides of greased cake pan.
In another medium bowl, beat condensed milk, lime juice, egg yolks, and lemon zest together at medium speed for 1 minute. Pour over oat crust in pan. Bake for 20 minutes or until center is firm (be careful that it doesn't burn on top).
Remove from oven and chill before serving.
