Cranberry Honey Wine Tart
1-3/4 Cup Flour
3/4 Cup Butter, Softened
1/2 Cup Confectionersí Sugar
1/3 Cup Orange Marmalade
1/2 Walnuts, Coarsely Chopped
1 Envelope Unflavored Gelatin
1/4 Cup Cold Water
1 Cup Dry Wine Or Apple Juice
1/2 Cup Honey
3 Cups Fresh Or Frozen Cranberries
Whipped Cream† - Optional
†Heat oven to 375 degrees F.
Prepare cookie crust by mixing all ingredients. Press dough in bottom and up 1-1/2 inches up side of ungreased 9x3 inch springform pan. Bake 18-20 minutes or until crust is golden brown. Cool for 10 minutes.
Spread marmalade on bottom of crust. Sprinkle with walnuts.
Sprinkle gelatin on cold water in a saucepan. Let stand 5 minutes or until gelatin is softened. Stir in wine or apple juice, honey and cranberries. Heat to boiling, stirring occasionally, reduce heat slightly. Boil uncovered for 5 minutes, stirring occasionally; remove from heat. Let stand 30 minutes to cool.
Pour cranberry mixture over walnuts in crust. Cover and refrigerate at least 4 hours until chilled. Run metal spatula around side of tart to loosen; remove side of pan.
Serve with whipped cream if desired.
