Chocolate Orange Cheesecake

 

Ingredients:

Chocolate Wafers

Light Brown Sugar, Packed

Cream Cheese, Softened

Grated Orange Zest

Heavy Cream, Chilled

 

 

Optional: Grated or shaved bittersweet chocolate for decorating

Directions:

Preheat oven to 500186F. Butter a 12 cup muffin pan.

Grind wafers finely in a food processor. Mix together wafer crumbs, butter, and 2 tablespoons brown sugar In a medium bowl until combined well. Divide crumbs evenly among the muffin cups, then firmly press onto bottom an a little up the side of each cup with fingertips. Bake for 5 minutes and cool in muffin tins for 10 minutes. Loosen chocolate cups and remove to rack to a wire rack.

Beat together cram cheese, orange zest, and remaining brown sugar in a medium bowl with an electric mixer on medium-high until fluffy. Beat cream I another bowl with cleaned beaters in a chilled bowl until it just hold a stiff peak. Fold the whipped cream gently into the cream cheese mixture.

Mound the filling into the wafer shells, if using sprinkle with chocolate shavings and serve, or chill until ready to serve.
