Blueberry Buckle



2 Cups All-Purpose Flour

Cup Sugar

1-1/2 Teaspoon Baking Powder

Teaspoon Salt

Cup Shortening

1 Egg

Cup Milk

1 Cup Blueberries


Cup Sugar

1/3 Cup All-Purpose Flour

Teaspoon Cinnamon

Cup Butter


In a large bowl combine 2 cups flour, cup sugar, baking powder, and salt. Cut in the shortening. In a separate bowl beat the egg with the milk. Add the liquid ingredients to the flour mixture and blend. Pour half the batter into a 9 inch round or square pan. Sprinkle cup blueberries over the batter. Press the berries a little. Carefully pour the remaining batter on top and sprinkle with the other cup of the blueberries.

In a small bowl mix cup sugar, 1/3 cup of flour, cinnamon and butter with a pastry knife or using 2 knives cut in until it resembles coarse meal. Sprinkle the topping evenly over the batter.

Bake in a 375F degree oven for 45-50 minutes.
