Zippy Bars



1/2 cup butter or margarine

1 egg yolk

1 tsp vanilla

2 cups flour

1/2 tsp baking soda

1/4 tsp salt

1/4 cup milk

1 cup raspberry jelly



8 ounce almond paste, cut in small pieces

1 egg white

1/2 cup sugar

1 tsp vanilla

3 Tbsp butter or margarine, softened

3 eggs

Green Food Coloring



2 ounces white chocolate, melted

1 Tbsp butter, softened

1 tsp vanilla

2 cups confectioners sugar

1/4 cup hot milk


Preheat oven to 350 degrees F. Grease a 15 x 10 x 1 inch baking pan.

In a large bowl, with an electric mixer, cream the butter and the brown sugar; beat in 1 egg yolk and vanilla. Combine flour, baking soda and salt. Blend in alternately with milk. Spread onto prepared cookie sheet and cover with jelly. Pour filling over jelly layer. Bake for 30-35 minutes. Cool in pan on rack. When cooled spread with icing and cut into small bars.

Filling: In a medium bowl, with an electric mixer, combine the almond paste with egg white, sugar, vanilla and butter. Beat until smooth. Add the 3 eggs, one at a time, beating well after each addition. Add food coloring to desired tint.

Icing: In a medium bowl, with a electric mixture, combine the melted white chocolate, 1 tablespoon butter, vanilla, confectioners sugar and hot milk. Beat until smooth.
