Xmas Strip Cookies
1 cup butter
1-1/2 cup sugar
2 egg yolks
1/2 teaspoon vanilla
2 cups all-purpose flour
3/4 cup unblanched almonds, ground
1 egg white, slightly beaten
red and green colored sugars
In a medium bowl, with an electric mixer, cream the butter and sugar until light and fluffy. Add the egg yolks and vanilla; beat well.
Mixing at first with a spoon, gradually add the flour and almonds, a little at a time, then knead well with hands. Divide the dough into 3 portions and wrap with plastic, chill for 30 minutes.
Roll out a portion at a time on a lightly floured board to about 1/4 inch thickness. Cut into 3 x 1 inch strips, using a sharp knife or pastry wheel. Place 1 inch apart on an ungreased cookie sheet.
Brush the strips with the egg white. Sprinkle each with red or green sugar. Bake in a 350 degree F oven for 10-12 minutes or until golden brown.
