Ugly Cookies

 

Ingredients:

Whole Blanched Almonds

Extra Large Egg Whites

All-Purpose Flour

Directions:

Preheat oven to 350. Lay the almonds in a single layer on a baking sheet and toast for 12 minutes or until toasted golden. Let cool.

Finely chop one half of the almonds with 4 tablespoons of sugar. Chop of remaining almonds to a medium coarseness and chop the remaining of the almonds coarsely. Mix all the almonds together.

Lower the oven to 250. Lightly grease and flour a baking sheet.

Using an electric mixer beat the egg whites in a medium bowl to soft peaks. Gradually add the sugar a little at a time, beating well after each addition. Add the nuts gradually. Add the cinnamon and vanilla. Continue to mix until well combined.

Place 2 tablespoon-size mounds of the batter onto the prepared pan, about 1 apart. Bake for 45 minutes. Raise the temperature to 300 and bake for an additional 25 minutes. Remove from sheet and allow to cool before serving.
