Sourdough Applesauce Donuts

Sponge (Sour Dough Starter)

Peanut or vegetable oil, for frying

Directions:

In a large bowl combine all ingredients except the frying oil in a large bowl. Mix and knead until the dough pulls away from the bowl and becomes smooth, approximately 3 to 4 minutes. On a well-floured surface, roll out the dough to 1/2 to 1 thick. Cut out the donuts using a 2 to 2-1/2 doughnut cutter. Transfer to a greased baking sheet, and allow to rise for 30 minutes or doubled in size.

Heat 3-inches of vegetable oil or shortening to 375F in an electric fryer or deep saucepan. Gently place the doughnuts into the oil, 3 to 4 at a time, and fry doughnuts until golden, about 2 minutes each side. Drain on paper towels

**These can also be Filled: Roll the dough out on a lightly floured surface to about 1/2 and cut with a 2-1/2 to 3 floured biscuit cutter. Transfer to a greased baking sheet and allow to rise for 30 minutes, or doubled in size. Fry as before.

Fit a pastry bag with a medium - large tip and fill with apple die filling. Poke a hole in the side of the doughnut and pipe the filling inside. Dust heavily with confectioners' sugar while still slightly warm
