Sand Dollars

 

Ingredients:

Cup

Butter, Softened

Cup

Sugar

Egg Yolk

Vanilla

All-Purpose Flour

Egg White, Lightly Beaten

 

 

Thinly Sliced Blanched Almonds, For Decoration

 

 

Sugar For Dusting

Directions:

Cream the butter, gradually beating in the sugar, egg yolk and vanilla. Mix the flour and salt, slowly stirring into the butter mixture. Form the dough into a ball, then flatten onto a large sheet of plastic wrap. Wrap the dough, and refrigerate for at least 2 hours or until firm.

Preheat oven to 350F. Lightly grease 2 baking sheets.

Roll the dough to 1/8 thick on a sheet of waxed paper. Cut out with a 2 cookie cutter and set on baking sheets about 2 apart. Brush cookies lightly with egg white, arrange 5 almond slices on each cookie, like the stokes of a wheel, Brush again with egg white, very lightly, then sprinkle each one with a little sugar. Bake for 10-12 minutes, until edges are light brown. Cool cookies on baking sheets for 5 minutes, transferring to wire racks to finish cooling.
