Orange Buttermilk Cupcakes

 

Ingredients:

Butter, Softened

Juice Of 2 Oranges

 

 

Juice Of 2 Lemons

Directions:

Preheat oven to 375F. Spray miniature muffin tins with cooking or baking spray.

 

In a large bowl cream the butter and 1 cup of sugar with an electric mixer until light and fluffy. Add the eggs one at a time. Combine the flour, baking soda, and salt in a small bowl. Add flour mixture alternately with the buttermilk to the creamed mixture. Fill the mini muffin tins less than half full. Bake in a 375F oven for 12 minutes.

In a saucepan cook 1 cup of sugar, orange juice, lemon juice until sugar is dissolved. Spoon 1 teaspoon of orange sauce over each cake when removed from oven but still in pan. After adding the sauce, let the cupcakes cool in pans, then remove.
