Molten Marshmallow Cupcakes

 

Ingredients:

1-1/2

Cup

Semi-Sweet Chocolate Chips

Cup

Butter, Softened

1/3

Cup

Sugar

2

 

Large Eggs

Tsp

Vanilla

1

Cup

All-Purpose Flour

6

 

Large Marshmallows

 

 

Powdered Sugar For Dusting

Directions:

In a medium saucepan over very low heat, stir chocolate chips and butter until melted and smooth. Remove from ehat and whisk in sugar, eggs and vanilla until well blended. Stir in flour.

Fill 6 muffin tins with cupcake papers. Fill the prepared muffin tins about halfway full of batter. Press a marshmallow into center of the batter. Spoon remaining batter equally over marshmallows, completely covering.

Bake in center of a 350F oven until tops are puffed and crackly, 12-15 minutes. Let cool about 10 minutes before removing from muffin tins. Sprinkle tops with powdered sugar if desired.
