Mocha Walnut Rum Balls

 

Ingredients:

Chocolate Cookie Wafers

Walnuts, Finely Chopped

Instant Coffee Granules

Rum

Instant Espresso Coffee Powder

Directions:

Place the cookie wafers in a food processor and using the pulse button, pulverize to form powdery crumbs. Place crumbs in large bowl. Place walnuts in the food processor and using the pulse button, using a on and off motion, grind to fine crumbs but not pasty. Add the ground walnuts to the bowl with cookie wafers along with 1-1/2 cup sugar.

Dissolve the coffee granules in rum; stir in corn syrup. Blend into crumb mixture until crumbs are moistened enough to hold together (add additional rum if needed). Shape into 1 balls. Mix remaining cup confectioners sugar with the espresso powder. Roll balls in sugar mixture to coat. Store loosely packed between sheets of waxed paper or foil in airtight container up to 3 weeks.
