Mincemeat Tassies

Cup Butter, Softened

3 Oz Cream Cheese, Softened

1 Cup Flour

11 Ounce Jar Of Mincemeat

1/2 Medium Granny Smith Apple (Or Other Tart Flavored Apple) Peeled, Cored And Grated

Zest Of 1 Lemon

Crust: Beat the butter and cream cheese until smooth. Add flour and mix until a dough forms. Divide into 24 balls. With your fingers, press each ball into an ungreased mini muffin cup. Make sure the dough is smooth on the bottom and sides and doesn't hang over the top of the cup.

Filling: While the pastry is chilling combine, in a small bowl, the jar of mincemeat with the grated apple and lemon zest, adding more or less of each to taste. (Note: You can also add orange zest, chopped nuts or dried or candied fruits and a little extra brandy or rum.)

Place about a teaspoon of mincemeat into each shell

Bake in a 350 degrees F oven for about 10 - 12 minutes or until the pastry has lightly browned. Remove from oven and cool on a wire rack. Dust with confectioners' sugar before serving. Serve warm or at room temperature. These tarts freeze very well

You can also make pastry stars to set on top of each cookie before baking. (if doing this dbl the recipe)
