King Kamehameha Bars
2 Cups Flour
1/2 Cup Confectioner's Sugar
2 Sticks Butter
1 Cup Shredded Coconut
1/2 Cup Chopped Macadamia Nuts
1-1/2 Cups Sugar
1/2 Cup Fresh Lime Juice
1/4 Cup Flour
1 Tsp Baking Powder
4 Large Eggs
Preheat Oven to: 350°F, Grease a 13x9” pan
Crust: Combine 2 cups flour, confectioner's sugar, butter, shredded coconut, and chopped macadamia nuts in a large bowl. Use two knives to cut and mix the ingredients until the mixture is in little bits about the size of small peas.
Coat the bottom of the baking pan with the flour mixture. Bake for 20 minutes at 350°F until browned.
Remove from oven and let cool for at least 10 minutes.
Topping: In a second bowl, mix the granulated sugar, lime juice, 1/4 Cup flour, baking powder, and eggs until the mixture smooth.
Pour into the baked crust. Bake for 20 minutes at 350°F until the filling is set. Allow to cool and cut into bars.
To serve, dust with a little confectioner's sugar
