Italian Amaretti Cookies

Ingredients:

Lb

Blanched almonds

4

Drops

Almond oil

Cup

Sugar

Egg whites, lightly beaten

1

Tbl

Confectioners sugar

Directions:

Preheat oven to 250.

In a food processor finely ground almonds. Combine almonds with almond oil, sugar and egg whites, thoroughly knead into a firm dough. With moistened hands, form dough into 1 balls. Place balls about 1 apart on a ungreased baking sheet. Place baking sheet on bottom rack and bake for 25 min., cover with a sheet of aluminum foil and continue to bake for another 30-35 min.

Transfer cookies to a wire rack. Using a fine sieve sprinkle with confectioners sugar.

**Note: Instead of making 1 Amaretti. Wrap a small amount of dough around a hazelnut, sprinkle with granulated sugar before baking for 40-45 min. (makes about 100 Hazelnut Amaretti.
