Honey Ginger Bourbon Balls

 

Ingredients:

Gingersnap Cookies (1 Cup Cookie Crumbs)

Confectioners Sugar

Pecans Or Walnuts, Finely Chopped

Ounce

Unsweetened Chocolate (1 Square)

Honey

Cup

Bourbon

Directions:

In a food processor, finely crumble cookies to make 1 cup of crumbs. Combine the cookie crumbs, 1 cup of confectioners sugar and the nuts in a large bowl. Combine chocolate and honey in small bowl over boiling water; stir until chocolate is melted. Blend in bourbon. Stir bourbon mixture into crumb mixture until well blended. Shape into 1 balls. Sprinkle remaining cup confectioners sugar over balls. Refrigerate until firm.

**Note: these improve with age. Store in an airtight container in the refrigerator. They will keep several weeks, and are best served after 2-3 days.
