Holiday Biscotti

 

Ingredients:

Almonds Or Hazelnuts, Chopped

Dried Blueberries

Cup

Cranberries Or Dried Tart Cherries

Directions:

Preheat oven to 350F. Using cooking spray lightly grease 2 baking sheets.

Stir together flour, cornstarch and baking powder in a small bowl.

In a large mixing bowl add the eggs, sugar, vanilla, lemon juice and salt, using an electric mixer on medium speed, beat mixture until smooth, about 2 minutes.

Add the flour mixture to the egg mixture in 3 batches, mixing on low after each addition. Stir in the dried fruit and the nuts.

Divide the dough in half and shape into a 10 x 3 rectangle and place on baking sheets. Bake until toothpick inserted in center comes out clean, 12-15 minutes. (Tops will not be browned. Do not overbake as biscotti will be dry). Let cool on baking sheets 10 minutes.

Cut each rectangle into 12 equal slices. Place slices cut side down on the baking sheet. Bake until crisp, about 11-13 minutes. Remove from baking sheet and cool on wire racks.

Store in an airtight container.
