Hazelnut Cookies

 

Ingredients:

Butter

All-Purpose Flour

Cup

Confectioners Sugar

Ground Hazelnuts

Eggs, Well Beaten

 

 

Juice And grated Peel of 1 Lemon

Egg Beaten With 1 Tablespoon Water For Glaze

Directions:

Cut butter into flour with pastry cutter or 2 knives. Stir in confectioners sugar and 3 cups of the ground hazelnuts. Add eggs, lemon juice and lemon peel. Cover dough tightly with plastic wrap and chill thoroughly, for at least 2 hours.

Preheat oven to 350F. Lightly grease 2 baking sheets.

Drop the cookies by teaspoonfuls onto prepared baking sheets about 2 apart. Flatten with a fork, brush cookies gently with egg water glaze, and sprinkle with pinches of remaining ground nuts. Bake for 10-15 minutes or until golden brown. Cool on baking sheets for 3 minutes, before transferring to wire racks to finish cooling.

Cookies may also be rolled out to thick and cut with cookie cutters before glazing, and sprinkling with nuts to bake.
