Fudge Mound Cookies

Directions:

In a medium bowl mix together the flour, baking powder, cinnamon, nutmeg, salt, soda, and unsweetened cocoa. In a large bowl cream together the butter, sugar, 1 tsp vanilla, brown sugar, mashed potatoes, and egg. Add the dry ingredients to the creamed mixture, alternately with the milk. Allow the dough to stand for 10 minutes before baking. Drop by tablespoonfuls onto a greased cookie sheet. Bake in a 350F oven for 15 minutes.

In a medium bowl mix together confectioners sugar, sweetened cocoa, hot coffee, and teaspoon vanilla. Let the cookies cool before frosting.
