Crispy Nut Slices



1 Cup Butter

1/2 Cup Sugar

1 Egg Yolk

1/2 Tsp Vanilla

1-1/2 Cup Cake Flour

1 Tsp Baking Powder

1/2 Tsp Salt

1 Egg White

1/3 Cup Finely Chopped Walnuts, Pecans Or Almonds

2 Tbsp Sugar


 In a medium bowl with an electric mixer, Cream the butter. Gradually add the sugar, creaming well. Add the egg yolk and vanilla; beat well.

Sift together the flour, baking powder, and salt. Add to the creamed mixture and knead to make a smooth dough. Divide the dough into two parts, shaping into logs 8 x 2 inches long. Wrap in waxed paper or plastic wrap and chill for at least one hour.

Beat the egg white slightly and brush the chilled cookie rolls. Combine the finely chopped nuts and the 2 tablespoons sugar. Roll the coated dough into the mixture, pressing the nuts firmly.

Slice about 1/4 inch thickness and place on a lightly greased cookie sheet, about 1 inch apart. Bake in a 350 degree F oven for 8-10 minutes or until lightly browned at edges.
