Crescent Cookies



1 Cup Butter

1-1/4 Cup Sugar

1/4 Tsp Salt

Grated Rind Of 1 Lemon

1-1/3 Cup All-Purpose Flour, Sifted

1-1/2 Cups, Unblanched Almonds, Ground

Confectioners Sugar for dusting


 Cream the butter. Add the sugar, salt and lemon rind; cream until light.

Add the flour, then the almonds, mixing with a spoon at first, then kneading lightly with hands. Chill for 1 hour.

Roll out one quarter of the dough on a lightly floured board to 1/8 inch thickness. Cut with a crescent-shaped cookie cutter.

Place on a lightly greased cookie sheet. Bake in a 350 degree F oven for 10-12 minutes or until golden brown. When cool dust with confectioners sugar.
