Cranberry Oatmeal Cookies

Light Brown Sugar, Firmly Packed

Dried Cranberries

White Chocolate Chunks, Coarsely Chopped

Directions:

Preheat oven to 350F. Light grease two baking sheets.

Mix together the flour, baking soda, salt and cinnamon in a medium bowl; stir in oats. Set aside.

Beat together sugar, butter, and brown sugar with an electric mixer on medium-high until light and fluffy. Beat n eggs, on at a time, beating after each addition. Add the honey and vanilla, beat until blended. Add the flour mixture in two additions, beating until just combined. Stir in the cranberries and chocolate chunks with a spoon.

Drop the dough by heaping tablespoonfuls about 2 apart onto baking sheets. Bake for 9-11 minutes, Cookies will be soft in the center. Let cool on baking sheets for 5 minutes, before transferring to wire racks.
