Cranberry Frost Bites

 

Ingredients:

Dried Cranberries

Orange Juice Or Orange-Flavored Liqueur

Butter, Softened

Sugar

Orange Peel, Finely Grated

All Purpose Flour

White Chocolate Baking Chips

Vegetable Oil

Directions:

Preheat oven to 350. Grease two baking sheets.

In a small bowl, combine orange juice and cranberries. Cover and microwave on high for 1 minute. Let cool, covered.

In a large bowl, beat butter and sugar until fluffy. Beat in egg and orange peel.

In a separate cowl, combine flour and baking soda. Stir into butter mixture. Add cranberries, any soaking liquid and oats; mix well.

Drop dough by rounded teaspoonfuls onto baking sheets, spacing 2 apart, and flatten slightly. Bake 10-12 minutes, until golden brown. Transfer to racks and cool completely.

Microwave chocolate and oil in a small deep bowl for 3-4 minutes on low, stirring once, Let stand 1 minutes, stir until smooth.

Dip one-third of cookie in chocolate and set on waxed paper lined baking sheets. Chill until chocolate is firm
