2 sticks softened butter

2 cup sugar

2 eggs

1 pound ricotta cheese

4 cup flour, sifted

1 tsp salt

1 tsp baking soda

2 tsp baking powder



1/4 cup soft butter

3 tbsp milk

1/2 tsp vanilla extract

1/2 tsp almond or anise extract

2 cup 10X sugar


Food coloring, if desired

1/2 cup chopped walnuts (optional)


 Preheat oven to 350 deg F.

Beat butter and sugar with mixer until fluffy, add eggs and ricotta cheese. Slowly add dry ingredients and mix well. Roll dough into the size of walnuts and place on ungreased cookie sheet about an 1 inch apart. Bake for 15 minutes or until golden. Cool before frosting.

 Icing: Mix all ingredients in a medium bowl, assign more milk to make a smooth icing. Dip the cookies in the icing and sprinkle with nuts if desired.
