Cocoons

 

Ingredients:

1/2 Cup Butter

2 Tbsp Sugar

1 Tsp Vanilla

1 Cup Flour

1 Cup Pecans, Ground

Confectioners Sugar

Directions:

In a medium bowl with an electric mixer, cream the butter. Add the sugar and vanilla; beat until light and fluffy. Stir in flour and the pecans; mix well. Roll the dough into small balls the size of walnuts. Place an inch apart on a greased cookie sheet. Bake for 30 minutes in a 300 degree F oven or until golden brown.

While warm (not hot), roll in confectionersí sugar, set on wire rack to finish cooling, then re-roll in confectionersí sugar once again.
