Chocolate Mint Sandwich Cookies



1 Cup Butter

1-1/2 Cups Confectioners Sugar

2 Ounces (2 Squares) Unsweetened Chocolate, Melted and cooled

1 Egg

1 Tsp Vanilla Extract

2-1/2 Cup All-Purpose Flour

1 Tsp Cream Of Tartar

1 Tsp Baking Powder

1/4 Tsp Salt



1/4 Cup Butter, Softened

2 Cups Confectioners Sugar

2 Tbsp Milk

1/2 Tsp Peppermint Extract

Green Food Coloring


 In a large mixing bowl, cream butter and confectioners’ sugar. Add melted chocolate, egg and vanilla; mix well. Combine dry ingredients; gradually add to creamed mixture, beating well. Shape dough into a 2” diameter roll; wrap in plastic and refrigerate for 1 hour or until firm. Makes about 6 dozen slices

Preheat oven to 400 degree F.

Unwrap dough and cut into 1/8 inch slices. Place 2 inches apart on ungreased baking sheets. Bake 7-8 minutes or until edges are firm. Remove to wire rack to cool.

Filling: In a bowl, combine the confectioners’ sugar, butter, milk and peppermint extract. Add food coloring to get desired tint.

Frost one cookie and place another cookie on top to make a sandwich, Repeat with all cookies and frosting.
