Braised Beef in Cream

Chocolate Meringue Cupcakes

Ingredients:

Crust

Chocolate wafer cookies, finely ground

Egg whites

Sugar

Semisweet chocolate chips

Cup

Pecans, chopped

Directions:

Combine cookie crumbs, butter and cinnamon in a medium bowl; stir until well blended. Line muffin pan with foil muffin cups. Press about 2 teaspoons mixture into bottom of each muffin cup.

Preheat oven to 325.

Beat egg whites in a large bowl until foamy. Gradually adding sugar and cinnamon; beat until stiff. Fold in chocolate chips and pecans. Spoon about 2 tablespoons filling into each muffin cup. Bake 30-35 min or until lightly browned and set in center. Cool completely. Store in airtight container.
