Ingredients:

Egg Yolks

Cup

Sugar

Butter, Melted

Heavy Cream

Ground Cinnamon

All-Purpose Flour

Oil For Frying

 

 

Confectioners Sugar For Dusting

Directions:

In a large bowl with an electric mixer beat egg yolks until thick and lemon colored; gradually beat in sugar.

In a small bowl whip the heavy cream to soft peaks. Gently fold in heavy cream, butter and cinnamon.

Sift flour and salt together; fold into yolk mixture to make a soft dough. Chill dough. Divide dough in half. Roll each half into 1/8 thick on a lightly floured surface; cut into 3 x strips. Cut a lengthwise slit in center of each strip.; pull one end through the strip.

Heat the oil for frying to 375/ Fry a few at a time for a minute or two or until very light brown. Drain on paper towels and immediately sift confectioners sugar over both sides.
