Beignet Puffs

 

Ingredients:

Vegetable Oil Or Shortening For Frying

 

 

Confectioners Sugar

Directions:

Combine water and butter in a medium saucepan, Bring to a boil. Combine flour, sugar, and salt. Add to the saucepan. Stir over medium heat until dough is smooth, glossy and comes away from side of pan. Remove from heat and sitr 2 minutes to cool slightly.

Add eggs, one at a time, beating after each addition until well blended. Beat in vanilla.

Heat 2-3 oil or shortening in a deep skillet or saucepan to 365F.

Drop by teaspoonfuls, a few at a time, into the hot oil. Fry 6-7 minutes or until evenly browned on all sides. Remove with slotted spoon. Drain on paper towels. Roll in confectioners sugar.
