Banana Oatmeal Cookies



1-1/2 Cup Flour

1 Cup Sugar

1/2 Tsp Baking Soda

1 Tsp Salt

1/2 Tsp Nutmeg

3/4 Tsp Cinnamon

3/4 Cup Butter

1 Egg, Well Beaten

1 Cup Mashed Ripe Banana, 2-3 Bananas

1-3/4 Cup Rolled Oats

1/2 Cup Pecans Or Walnuts, Chopped

1/2 Cup Raisins

1 Cup Chocolate Chips


Banana Icing:

1/4 Cup Mashed Rip Banana

1/2 Tsp Lemon Juice

1/8 Tsp Salt

2 Tbsp Butter, Softened

2-1/2 Cup Confectioners Sugar, Sifted

1 Cup Grated or Flaked Coconut


Sift into a large mixing bowl, flour, sugar, soda, salt, nutmeg and cinnamon. Cut in butter. Add egg, bananas, rolled oats, nuts, raisins, and chocolate chips. Beat until thoroughly blended with a spoon. Drop by teaspoonfuls about 1-1/2 inches apart, onto ungreased cookie sheet. Bake in a 375 degrees F oven for 12-15 minutes or until edges are slightly browned. Remove immediately and cool on rack.

Icing: Mix mashed banana with lemon juice and salt. Cream in the softened butter. Gradually beat in confectionersí sugar. Beat until fluffy. Ice the Cookies and sprinkle with coconut.

*Note: coconut can be tinted before sprinkling on cookies by shaking in a plastic bag with a drop or two of food coloring to desired shade.
