Preheat oven to 375º. Grease a baking sheet.
Place apple pie filling into a food processor until finely chopped. In a large bowl, cream butter, ¼ cup sugar and brown sugar until fluffy. Add egg and vanilla; beat until smooth. Add chopped apples to creamed mixture; stir until well blended. Sift flour, ½ teaspoon cinnamon, baking soda, and salt into a medium bowl. Add dry ingredients to creamed mixture, stir until a soft dough is formed. Fold in walnuts. In a small bowl, combine ¼ cup sugar and ½ teaspoon cinnamon; stir until well blended. Drop by heaping teaspoonfuls on prepared baking sheet 2” apart. Sprinkle with sugar mixture. Bake 10-12 min or until edges are lightly browned. Transfer cookies to wire rack to cool completely, Store in an airtight container.
