Apple-Cot Dimples

 

Ingredients:

Apricots (1/2 Lb.)

Walnuts, Finely Chopped

Directions:

Preheat oven to 375F. Grease 2 cookie sheets.

In a large mixing bowl, add the melted butter, sugar, salt, and the beaten egg. Using an electric mixer on medium, beat well. Sift the flour and the baking soda together and add to the butter mixture alternately with the milk. Add the vanilla. Divide the dough in half.

In half the dough work in the cocoa. Roll the chocolate dough into thickness, and cut with a 1-1/2 or 2 cookie cutter, repeat with the white dough, make equal number of circles in both light and dark dough. Cut center smaller hole in the light cookie dough circles for filling.

Press a light cookie circle over a dark one and place on prepared cookie sheets. Place one teaspoonful of the filling into each hole in the center of the light cookies. And bake for 20 minutes. Remove from cookie sheets and cool on wire racks.

Filling: Wash the apricots and place in a medium saucepan, over medium heat, with 1 cup of water. Pare, core and thinly slice the apples. Add to the apricots; add the cinnamon and sugar. Lower the heat and cook slowly until the mixture is a little thicker than applesauce. Mix in the nuts.

**Any shape of cookie cutter may be used as long as there are equal cookies and there is a hole in the center to fill with the apricot-apple filling. I have made diamond and star cookies.
