Almond Sugar Cookies



1-1/4 cups almonds, blanched ground, but not pasty
1-3/4 cups confectioner's sugar
3/4 teaspoon almond extract
1/4 teaspoon salt
3 egg whites


In large bowl mix together almonds (ground in 1/4 cup batches in blender), confectioners' sugar, almond extract, and salt; set aside.  In large bowl of electric mixer, beat egg whites until stiff but not dry; fold into almond mixture.  Drop by teaspoonfuls onto well-greased and lightly floured cookie sheets.  

Bake in 325 degree F. oven 12 to 15 minutes. Remove from oven; let stand 1 minute.   Remove cookies from cookie sheets to wire racks to cool completely.
