Combine 1 cup chocolate chips, sour cream, honey and salt in a small saucepan. Stirring constantly cook over low heat until smooth. Pour into a 8” square pan, cover, and freeze for 20 min. Shape Teaspoonfuls of chocolate mixture into aprox 36 balls; place on aluminum foil and freeze 10 min.
Process remaining 1 cup chocolate chips in food processor until finely ground, transfer to a small bowl and set aside. Ina large bowl, combine cracker crumbs, confectioners sugar, walnuts, butter and rum. Press crumb mixture around each chocolate ball, until covered. Immediately roll in ground chocolate. Store in airtight container in refrigerator. Serve chilled.
