Lost the Thermometer Brittle



1 Cup Sugar

1/2 Cup Light Corn Syrup

1-1/2 Cups Salted Nuts: Pecans, Cashews, Peanuts, Almonds, Macadamia Etc

1 Tsp Butter

1 Tsp Baking Soda

1 Tsp Vanilla Extract


Grease a cookie sheet or cover with parchment paper and spray with cooking spray.

 In a microwave safe bowl, combine the sugar and corn syrup. Microwave, uncovered, on high for 4 minutes; stir. Heat 3 minutes longer. Stir in nuts of choice and butter. Microwave on high for 30-60 seconds or until mixture turns an amber color (mixture will be very hot). Quickly stir in baking soda and vanilla until light and foamy.

Immediately pour onto prepared cookie sheet. Spread with a greased spatula. Chill for 20 minutes or until set; break into pieces. Store in airtight container
