Lemon Pecandies



1-3/4 Cups Sugar

1 Cup Whipping Cream

1 Cup Min Marshmallows

1 Tsp Dried Lemon Peel

1/2 Tsp Lemon Extract

1-3/4 Chopped Pecans


On a baking sheet place wax paper, grease wax paper with cooking spray or butter.

In a large microwave sage bowl, combine sugar and whipping cream. Microwave on high for 8-10 minutes or until mixture reaches soft ball stage (test in ice water to see if it easily forms a ball in ice water.

Without scraping sides pour candy into another large bowl. Add marshmallows, lemon peel, and lemon extract, beat 3-5 minutes or until mixture thickens and loses gloss. Stir in pecans. Quickly drop teaspoonfuls of candy onto wax paper; cool completely.
