Gal’s Caramel-Cranberry Nut Snack Mix

Popped popcorn, unpopped kernels removed

Semi-sweet chocolate bits

Honey-roasted mixed nuts

Directions:

Place popcorn in large greased bowl (using cooking spray or butter), set aside.

Combine sugar, brown sugar, corn syrup and water in a medium saucepan over medium heat. Bring to a boil, stirring occasionally. Brush sides of pan with pastry brush dipped in water to remove any sugar crystals. Boil until mixture reaches 300º (hard crack stage) on a candy thermometer, about 6-8 minutes. Remove from heat. Carefully stir in butter, salt, baking soda and vanilla. Pour syrup over popcorn; tossing with a greased spoon to coat (Caramel is very hot and could cause a severe burn – pls handle carefully). Spread on waxed paper to cool. Break into chunks. Cool completely.

Combine cooked caramel popcorn with remaining ingredients, mixing gently.

Store in airtight container or plastic bags.
