Eggnog Fudge



2 Cups Sugar

1 Cup Eggnog, Homemade Or Commercial

1 Tbsp Light Corn Syrup

2 Tbsp Butter

1 Tsp Vanilla

1/2 Cup Walnuts Or Pecans, Chopped

2 Tbsp Semisweet Chocolate Pieces

2 Tbsp Butter


Butter 8x4x2 inch pan.

Butter sides of a heavy 3-quart saucepan. Combine sugar, eggnog, and corn syrup. Cook over medium heat stirring constantly until sugar dissolves and mixture boils. Cook to soft boil stage (238), stirring as necessary. Immediately remove from heat and cool to lukewarm (110) without stirring. Add 2 Tbsp butter and vanilla. Beat vigorously until it becomes thick and loses its gloss. Quickly stir in nuts. Spread in prepared pan.

In a microwave dish combine chocolate and remaining butter. Microwave for 30 seconds, stir, if needed microwave an additional 20 seconds or until smooth. Drizzle over top of fudge.
