Candied Holiday Popcorn

 

Ingredients:

Vegetable cooking spray

16 cups popped popcorn

2 cups sugar

1/2 cup light corn syrup

2 tsp almond extract

1 tsp salt

1 tsp baking soda

 

depending on holiday get appropriate paste food coloring

Christmas red and green

4ths of July red, white, and blue

Easter blue, yellow, green, pink etc

Directions for Christmas Candied Popcorn:

Spray inside of two 14x20 inch cooking bags with cooking spray. Divide the popcorn in half and place in bags.

In 2 quart microwave safe bowl, combine the sugar and corn syrup. Microwave on high for 2 minutes or until mixture comes to a boil. Stir and microwave for 2 minutes longer. Stir in almond extract, salt and baking soda; Divide in half (if using 2 colors) and tint one with red and one with green. Pour green syrup over one bag of the popcorn; and red over the popcorn in the other bag. Stir and shake until well coated. Microwave on high power for 3 minutes, stirring and shaking after one minute. Spread both bags of popcorn on aluminum foil sprayed with cooking spray; cool. Store in an airtight container.

Replace the colored paste of choice for the above colors depending on the holiday or occasion.
