Yogurt Pound Cake with Marmalade Glaze

Plain Yogurt Or Orange Favored Yogurt

Finely Grated Lemon Peel

Tsp

Vanilla

Cup

Vegetable Oil

Lemon, Orange, Or Grapefruit Marmalade

Water

Directions:

Preheat oven to 350. Generously grease a 8-1/2 x 4-1/2 loaf pan.

Sift flour, salt, and baking powder into a medium bowl.

Combine yogurt, sugar, eggs, lemon peel and vanilla in a large bowl, whisk until well blended. Gradually whisk in dry ingredients. Using a rubber spatula, fold in oil. Transfer batter to prepared pan. Place pan on baking sheet. Bake cake on baking sheet for 50 minutes or until a tester inserted in center comes out clean.

Turn cake out onto a rack. Turn cake upright on rack to cool.

Stir marmalade and water in a small saucepan over medium heat until marmalade melts. Brush hot mixture over top of cake. Let glaze cool and set before slicing and serving.
