Red Devil’s Food Cake

 

Ingredients:

Directions:

Preheat oven to 350º. Grease and lightly flour two 9” round cakes pans.

In a small saucepan mix the sugar and ¾ cup of cocoa together, add ½ cup milk and 1 egg yolk (reserve the egg white for later) and stir until mixed. Cook over very low heat until smooth and thick, stirring constantly. Remove from heat and let cool.

In a large bowl cream the butter and 1 cup of sugar, with an electric mixer on medium, until light and fluffy.

In a small bowl beat 2 eggs and the remaining egg white together and beat into the creamed mixture. Add ½ cup milk, the dissolved baking soda, the flour and the salt. Add in the vanilla and beat until smooth. Add the cooled cocoa mixture and beat until smooth and well mixed.  Pour the batter into the prepared pans and bake for 30-35 minutes or until a tester inserted in center comes out clean. Remove from oven to wire racks to cool.

Place the sugar, egg whites, cold water, and salt in the top of a double boiler over simmering water. Beating constantly with an electric mixer, cook 8-10 minutes until thick and smooth. Remove from heat, add the vanilla, and beat occasionally until thick enough to spread and it holds it shape.

Spread 1/3 of the frosting between the layers, and the remainder of the to frost the sides and top of the cake.
